Science in the Kitchen
Chemistry happens all the time, especially in the kitchen. The smell of bread baking is a result of the Maillard reaction - this is what turns pale uncooked dough into a perfect golden loaf in the sustained heat of an oven. The loaf I made today was from sourdough starter which is mixture of natural yeasts and flour that cause the dough to rise as the yeasts release carbon dioxide gas.
